Mitch's grilled sandwich

A favorite from college.

2 slices of your favorite bread
2 slices of your favorite cheese(s)
a few slices of turkey and/or ham
sliced tomato
1 Tbsp of butter, softened (not melted)
grated parmesan cheese
dried parsley flakes (optional)

Warm bread, one slice at a time, on very low heat (don't toast it) in a small skillet. Remove and spread butter on warmed side. Sprinkle parmesan cheese and parsley on buttered side. Return one slice of bread to skillet, buttered side down. Place one slice of cheese on bread, then meat, tomato, and remaining slice of cheese. Top with remaining slice of bread, buttered side up. When bottom slice of bread is golden brown, carefully flip sandwich over with a spatula and grill other side.
