noodles with peanut-sesame sauce

Can be eaten warm or cold.

1 chicken breast
1 clove garlic, minced
½ tsp minced ginger
3 Tbsp soy sauce
1 tsp sesame oil
pepper

Combine garlic, ginger, soy sauce, sesame oil, and pepper. Marinate the chicken in this mixture 4 hours or overnight, turning halfway through. Broil, grill, or pan fry. Let it cool, then shred with forks (or better yet, your hands).

1 clove garlic, minced
3 Tbsp chunky peanut butter
1½ Tbsp tahini
3 Tbsp soy sauce
2 Tbsp water or broth
2 tsp rice vinegar
pepper to taste
chili sauce (such as Sriracha) to taste

Combine ingredients. Stir until smooth.

1 carrot, sliced into small strips
2/3 cucumber, sliced into small strips
½ red bell pepper, sliced into small strips
1 cup bean sprouts
1 lb fresh noodles (can be practically anything: egg, buckwheat, linguine) cooked, drained, and rinsed
1 tsp toasted sesame seeds
cilantro or green onions to garnish

Toss vegetables and noodles with shredded chicken, peanut-sesame sauce, cilantro or green onions, and sesame seeds. Eat it at room temperature.
