penne with zucchini and feta


It doesn't require that much work, and it tastes good. Perfect for busy weeknights and lazy weekends.

1 lb penne
3 small zucchini, sliced
1 c grape tomatoes, cut in half
2 cloves garlic, minced
10 (or so) black olives, such as kalamata, chopped
small handful of fresh parsley, chopped (about 2 Tbsp)
1 1/2 Tbsp butter
1 Tbsp olive oil
a few squeezes of lemon juice
red pepper flakes
a few ounces of feta cheese, crumbled
salt & pepper


Cook pasta in boiling water. Melt butter in a pan with olive oil. Add red pepper flakes. Saute zucchini for a few minutes. Add garlic, tomatoes, and chopped olives, cook for a few minutes longer. Add parsley. Toss vegetable mixture with penne and lemon juice, season with salt and pepper, add feta. Drizzle with more olive oil if desired.
